Plus, it’s Wednesday again which means another delicious recipe from an awesome cookbook. Last night it was so hot my hubby and I just had smoothies for dinner. They really hit the spot. With that in mind, I took today’s recipe from Rhiannon Lawrence’s cookbook, “Eat Free: No Gluten. No Sugar. No guilt.” Rhiannon has some delicious smoothie recipes in her book and the best part is that they are gluten AND sugar free and she even gives options on how to make them dairy free. Perfect for the hot summer afternoons or an after school snack.
Kefir is like yogurt. It’s a great source of probiotics and can be dairy free. You can use coconut kefir and almond milk to make a diary-free smoothie that is delicious and nutrient packed. This is one of my favorites and a great way to sneak probiotics and spinach into my kids’ diet.
“¢Â¼ cup blueberries
“¢Â¼ cup raspberries
“¢1 handful spinach or kale(optional)
“¢1 cup milk
“¢2 cups ice
Blend thoroughly in blender and enjoy!
