Recipe Wednesday: Pioneer Waffles

Caleb Wanock, The Forgotten Skills of Self-Sufficiency used by the Mormon PioneersIn honor of Pioneer Day coming up this weekend we’re highlighting a recipe from The Forgotten Skills of Self-Sufficiency used by the Mormon Pioneers by Caleb Warnock. The book coming out next month, August 2011. It highlights everyday skills used by the pioneers that helped them survive their rough journey without many of the pleasantries we have today. This book will be sure to give you a greater appreciation for the Mormon pioneers as well as some great ideas to help you live a more self-sufficient life.



In a bowl, hand-whisk to soft peaks (electric whisk will over-work the white):

  • One egg white

In a separate bowl, combine:

  • 1 egg yolk
  • 1/4 cup milk
  • 1/8 cup extra virgin olive oil
  • 1/4 teaspoon salt

Mixing thoroughly; add:

  • 1 1/2 cups pioneer yeast batter

(whole wheat, white, or a combination, according to preference)

Mix briefly until combined, taking care not to over-work the batter. Fold whisked egg white into batter. Pour into heated waffle iron. Serve with butter, Charmayne’s Peach Sauce, syrup, or homemade jam or jelly.

    I like this 🙂 It sounds pretty simple. Now if only the pioneers had chocolate chips to put in their waffles.

      Have you ever added marshmallows? They melt, then you have a little pocket of sugar to enjoy! =)

        I haven’t tried marshmallows but that sounds a little bit like heaven! I’ll have to try it 🙂

    I want and need this book, where and when I can I buy it? In fact I need a couple LOL, we do mountain man rendezvous and this would be an awesome addition to our encampment/traditions.
