Recipe Wednesday: Lemon Cream Cupcakes

We’re taking a break from the Healthy Recipes today, but with good reason: Wendy Paul! With Wendy Paul there’s always a reason to bake and today that reason is Mother’s Day. These delicious and cute cupcakes are sure to wow and delight any mother. I am especially excited about these Lemon Cream Cupcakes. Wendy Paul says that, “Cupcakes are a perfect dessert, party theme, gift, get-well favor, or ‘just because I love you’ treat.” You can find more cupcake recipes in Wendy Paul’s cookbook, 101 Gourmet Cupcakes.

Lemon Cream Cupcakes Lemon Cream Cupcakes, Wendy Paul, 101 Gourmet Cupcakes

1 box lemon cake mix
2 eggs
1 cup sour cream
1 package (8-oz.) cream cheese, softened
2 Tbsp. grated lemon zest
1 recipe whipped cream (see below)
1 tsp. lemon extract
½ cup crushed lemon drop candy

Mix together cake mix, eggs, sour cream, and cream cheese until smooth and creamy. Add grated lemon zest and combine. Fill paper liners¾ full.

Bake at 350 degrees for 15″“18 minutes or until cake springs back when lightly touched. Remove and cool cupcakes on a wire rack.

Add lemon extract to whipped cream and combine well. Top cooled cupcakes with lemon whipped cream and sprinkle with crushed lemon candy for garnish.

2 cups heavy whipping cream
¼”“½ cup powdered sugar (depending on preference)

Pour cream into large mixing bowl and start mixing at low speed. Gradually increase speed until cream thickens and soft peaks form.

Turn off mixer and add sugar. Start slowly again””no messes today! Beat until stiff peaks form.

The stiffer the cream, the easier it is to frost the cupcakes. Keep refrigerated. You can choose stiff or loose peaks, depending on your preference. Stiff peaks are easier to frost and stand tall to make designs.


Wendy Paul has another cookbook coming out in August called 101 Gourmet Cake Bites. The cake bites may be even more cute and delicious than Wendy Paul’s cupcakes, but I’ll let you try them out and decide for yourself.
