Today’s dinner recipe comes from Camille Funk’s Table for One cookbook. I thought since we’re coming up on Valentine’s day it would be good to make a meal that could be a little intimate (small) and that you could cook with each other (since that’s half the fun anyway). Camille’s recipes are all portioned for single servings (making them perfect for college students or singles of any age), but it would be super easy to make these recipes for 2 people: just double the amounts.
2 Tbsp. apple cider
1 Tbsp. cider vinegar
1 tsp. white wine (or white grape juice)
1 Tbsp. olive oil
1 tsp. honey
1/2 tsp. garlic, minced
1 Tbsp. apple, mashed (extra slices for garnish)
Dash of salt and pepper
4-6 oz. beef sirloin/ steak
1. In a small sauce pan, combine apple cider, cider vinegar, white wine, olive oil, honey, garlic, mashed apple, salt and pepper to make the marinade. Bring to a boil. Remove from heat.
2. Place meat and warm marnade in a Ziploc bag and coat thoroughly. Marinate in the refrigerator for 2-4 hours.
3. Heat grill to Medium-high heat. Grill steak for 2-5 minutes on each side, depending on how you like your steak.
4. Transfer meat to a plate. Garnish with extra sliced apple.
