Healthy Recipe Wednesday: Sun-kissed Orange Pancakes

Happy Wednesday everyone! Halfway through the week and time for yet another delicious recipe from one of the awesome chefs here at Cedar Fort. Today’s recipe comes from Carlene Duda’s Beyond Oatmeal: 101 Breakfast Recipes.

If you are sick of having the same two or three things for breakfast every morning, this is definitely the book for you. You’ll learn how to make streusels, crumb cakes, sweet breads, and even some amazing twists to the standard waffles, muffins, french toast and pancakes. Just check out this delicious version of pancakes. As usual with the recipes I choose, its easy and doesn’t have too many ingredients, which definitely helps out when you are rushing through your morning.

Sun-kissed Orange Pancakes

These pancakes have the refreshing taste of sun-kissed orange juice. Try them with ham and eggs for a fantastic way to start the day.

1 egg

2 Tbsp. butter, melted

1 cup orange juice

1 cup flour

2 tsp. baking powder

1 Tbsp. sugar

1/2 tsp. salt

Preheat a large skillet over medium heat.

In blender, combine egg, butter and orange juice. Process on high for about 20 seconds or until smooth. Add the flour, baking powder, sugar, and salt; process for an additional 20 seconds or until smooth.

Brush the skillet with oil. Drop a heaping serving in prepared skillet and cook for 3 to 5 minutes or until bottom is golden brown and top is speckled with holes. Turn the pancake and brown the other side. Serve warm.
