Healthy Recipe Wednesday: Marinated Turkey Wraps

Today’s recipe comes from The Diet Rebel’s Cookbook: Eating Clean and Green by Jillayne Clements and Michelle Stewart. Even the name of this book attests to it’s awesomeness. About 1/5 of this book talks about healthy foods, how to prepare them so that they retain as much Healthy living, heathy dinner recipes, healthy recipes for dinner, eating greenof their nutrients as possible and the health benefits of eating a diet without processed and refined foods. The other 4/5 is “Treasured & Tasty” recipes, from sauces and marinades to pot roasts and lasagna, and yes, there is even a section entitled “Sweets and Treats.”

Today’s dinner recipe has two parts: Marinating the turkey, then fixing the wraps. And even though the recipe says that they are turkey wraps, they can easily be done with chicken instead. Just your personal preference. Enjoy!

Marinated Chicken or Turkey Breasts
Makes: 6 breasts / Prep time: 20 minutes / Marinate time: 24″“48 hours

6 large chicken or turkey breasts, cut in half
½ cup olive oil
½ cup soy sauce (naturally fermented)
¾ cup sparkling apple cider
¼ cup agave, honey, or maple syrup
juice from½ lemon
juice from½ lime

Mix together olive oil, soy sauce, sparkling apple cider, sweetener, lemon juice, and lime juice. Pour over chicken or turkey breasts and tenderize with a fork. Cover and refrigerate for 24 to 48 hours. Meat can then be barbecued, grilled, baked, or cooked all day in a Crock-Pot.

Marinated Turkey Wraps
Makes: 4″“6 servings / Prep time: 30 minutes

4″“6 homemade tortillas
2 marinated turkey breasts, (see recipe above) cooked, cut up, and chilled.
2 avocados, sliced
2 tomatoes, diced
1 cup chopped lettuce
½ cup sliced olives
½ a medium red onion, thinly sliced
Homemade dressing of choice (Honey Dijon or Classic ranch, for example.)

In a tortilla, layer turkey, avocado, tomato, lettuce, olives, and onion. Top with dressing of choice and roll up.

      My Mom loves this book. She likes how it talks about eating healthy, but doesn’t encourage you to become a fanatic. And one of my husband’s favorite recipes is in it: Honey cinnamon butter.
