Healthy Recipe Wednesday: Lentil Skillet Dinner and Russian Cucumber Salad

Today’s recipes come from “The W.O.W Diet” by Michelle Snow. “The W.O.W Diet” is quite an unique book. It looks at the different major religions in the world and what health guidelines they give to their members, from no pig to no coffee, and the validity and benefits of the different aspects of those healthy lifestyles.

I chose these recipes (sorry, no dessert this time. Besides you’re supposed to be eating healthy) mostly because they looked easy and I am all about recipes being easy. The less dishes I have to clean and the less steps in a recipe the better. The ones I really like are where you just throw all the ingredients together and mix, or blend, or bake (the Russian Cucumber Salad is like that). Enjoy!

Lentil Skillet Dinner (Gluten Free)

1 vegetable or chicken bouillon cube

1 cup lentils

1 1/2 cups water

3 Tbsp. olive oil

2 tsp. minced garlic

1 large white onion, diced

1 cup mushrooms, sliced

2 yellow squash, sliced

2 zucchini squash, sliced

1 cup Roma tomatoes, chopped

1 cup fresh mozzarella, cubed

1/2 cup fresh basil, chopped

1/4 cup fresh oregano, chopped

Spike® Seasoning to taste

In a medium pot, combine bouillon cube, lentils, and water and cook until lentils are tender, about 10 minutes. While lentils are cooking, saute garlic and onion in olive oil in a large skillet for 2 minutes over medium-high heat. Add mushrooms and squash and cook until tender. Toss lentils and cooked vegetables with remaining ingredients. If you are gluten intolerant, be sure to use a gluten-free bouillon.

Russian Cucumber Salad

4 radishes, sliced

1 large cucumber, sliced

1 green onion, chopped

2 Tbsp. sour cream

Salt and pepper to taste

Combine all ingredients in medium-sized bowl and toss until vegetables are coated evenly.
