Healthy Recipe Wednesday: Allergen-Free Chili and Corn Bread

Today’s Healthy Dinner Recipe comes from Brianna Monson’s Allergy Free Cookbook for the Family. Brianna’s son has several life threatening allergies, so she created some safe recipes that he and her whole family could enjoy. They are easy and delicious, and now she is sharing them with you! A cool thing about Brianna’s recipes is that she tells you at the end of each one what allergies are and aren’t in it. There’s no guessing and no worry.

Now, even though it is technically spring, the weather isn’t always cooperating, so today I decided to share with you Brianna’s recipe for Allergen-Free Chili. And what goes more perfectly with chili than warm Corn Bread? Well, Brianna has a recipe for that too.

Allergen-Free Chili

It is hard to find chili that is allergen free, so I created this recipe. My family loves to have it on a cold rainy day. I also use it to make Coney Dogs. Healthy recipes for dinner, healthy dinner recipes

1 lb. hamburger
1 small onion, chopped
1 can diced tomatoes, optional
1 (15-oz.) can great northern beans, drained
1 (15-oz.) can red beans, drained
1″“2 cups water
1½ tsp. salt
¼ tsp. pepper
½ tsp. garlic powder
½ tsp. oregano
½ tsp. basil

BROWN hamburger with onion. Combine all ingredients in a pot and simmer for 20 minutes, stirring occasionally.

Tip: This also freezes well. You may also substitute the beans for another bean of your choice.

Corn Bread

My family loves this with dairy-free margarine and honey. It’s great as a side dish or a treat. Healthy Dinner recipes, healthy recipes for dinner

½ cup rice flour
¼ cup tapioca starch
¼ cup cornstarch
1 tsp. potato flour
1 cup cornmeal
1½ tsp. cream of tartar
¾ tsp. baking soda
½ tsp. salt
¼ cup sugar
1 cup soy milk
¼ cup oil

COMBINE all dry ingredients and mix well. Add wet ingredients and stir until well blended. Pour
mixture into a greased 8 x 8 pan. Bake at 375 degrees for 18″“20 minutes.

Tip: To make into muffins, pour batter into muffin cups¾ full and bake at 350 degrees for 20″“25 minutes.
To make this recipe soy free: Substitute soy milk with an equal amount of rice or cow’s milk.

    I’m sure Brianna knows this, but all of your readers might not. Carefully read labels of all ingredients, particularly canned goods (and spices) because they may not all be gluten- (or other allergen- either) free. In particular, some brands of cornstarch and canned beans are known to be unsafe.

      Thanks so much for reminding us! True, no matter what you are getting you should read the label. Sometimes the randomest things are used in packaged products.
