Caramel Apple Bars, Wendy Paul

1 cup butter softened

1 cup brown sugar

2 cups flour

2 cups quick cooking oats

1 tsp. baking soda

2 cups Granny Smith apples diced

1 cup walnuts or pecans, chopped

1 small jar caramel topping

Preheat oven to 350 degrees. Melt Butter and sugar, and add flour, oats, and baking soda. Mix together until dough crumbles. Press half of dough mixture into a small jelly roll pan.

Bake for 7-10 minutes. Remove from oven. Arrange apples and nuts on top of crust. Pour caramel sauce over top and sprinkle remaining dough mixture over entire caramel sauce. Bake 10-12 minutes longer until dough is slightly golden. Remove and cool completely. Cut into squares.
