Berry Buckle, Suzy Roberts

Whoever invented the idea that cakes and pastries were for breakfast is my hero.

1½ cups sugar

½ cup shortening

2 eggs

1 cup milk

4 tsp. baking powder

1 tsp. salt

4 cups flour

4 cups frozen mixed berries, thawed

Mix sugar, shortening, and eggs thoroughly. Stir in milk. In seperate bowl, mix dry ingredients and add to mixture. Gently fold in berries. Pour into a greased and floured 9×13 pan. (You could half this recipe for a 9×9 pan.)

2/3 cup flour

1 cup sugar

1 tsp cinnamon

Mix together flour, sugar, and cinnamon, and sprinkle over batter. Dot generously with butter. Bake at 375 degrees for 50-60 minutes.
